SPC was born in the mind and kitchen of Len Gallagher many years ago. He wasn't a classically trained chef, just a man with an impeccable palette and uncanny ability to cook dishes to their peak level of flavor. Len discarded the “French” way of starting every dish with a sautee of onion and garlic — and in doing so, discovered the deliciousness of “clean cuisine”.   Food the way it was meant to be eaten.  The only seasoning he ever used was SALT PEPPER and CAYENNE. The rest is history.
